After working at Henne Kirkeby Kro as sous chef, Mads went all-in and travelled to Japan to take on an apprenticeship to master the art of sushi. Returning home with lots of craftsmanship ready to pursue his dream making the best sushi restaurant in Europe, and ultimately change our perception of sushi.
“It was an absurd workload from 6 o’clock in the morning to 1 at night. Luckily when working 18 hours I had a lot of time to think about how I wanted to make my restaurant.”
Last year, in 2019, Mads Battefeld opened his brainchild Sushi Anaba located in the new Nordhavn district north of Copenhagen. Sushi Anaba is offering traditional edomae, but with fish from Scandinavia, in an intimate atmosphere with only eight bar seats available, run by Mads and his two team members.
“The dream is to have this one sushi restaurant where I work myself and still find it enjoyable and that it’s still personal. If Sushi Anaba doesn’t succeed, I don’t think I will stay in this industry.”
