How Herning’s Domæne keeps full control of the guest experience

Priding themselves on offering a holistic dining experience, Domæne has a menu that highlights raw materials grown from the rich soil of Jutland and born in the cool Danish waters. The two all-night experiences invite guests to enjoy 16 dishes that showcase luxurious ingredients handled with respect and confidence. 

While striving to “become one of the best restaurants west of the Great Belt Bridge and give Herning and mid-Jutland a new place to experience fine dining”, the team at Domæane aren’t willing to compromise on the guest experience. 

Joakim Thomassen, Restaurant Manager and Wine Director, says, “We’re not trying to be unique. We’re very down-to-earth and dogma-free, and we don’t feed our guests long, forced stories. 

We want our guests to sit back, relax, have a good time and enjoy a great experience composed of great food and service which speaks for itself.” 

Being 100% present with every guest 

It was their focus on the guest experience that led them to Superb’s GXM platform. Joakim explains, “At Domæne, we serve two different menus and ask our guests to pre-order in advance. That puts us in control of the experience.

We use experiences to make the guest select everything beforehand. That helps us control every detail once the guest enters the restaurant.

Superb is a self-driving system that requires low maintenance. Once it’s set up, the guest can go in on their own and cancel their booking. Experiences enable our guests to select their preferred menu and also wine menu in advance. That makes the job easier for everyone in our team and puts us in control so that we can be 100% present with the guest.” 

Before opening their doors, the chef behind Domæne was making waves in the Danish food scene. Jens Vincent previously worked at Treetop in Vejle and the Michelin-starred Ti Trin Ned in Fredericia. Combined with the experience of Joakim, they knew that to operate smoothly, they’d need better restaurant management than what’s out there.
